Vegetable Kootu – Kootu Recipe

Kootu is a traditional south indian gravy made from various vegetables. This is the finest kootu recipe.

INGREDIENTS

# 1 Cup of Chopped Carrots
# 1 Cup of Chopped Beans
# 1 Cup of Green Peas
# 1 Cup of Chopped Potatoes
# 1 Cup of Chopped Chayote / Chow Chow
# A pinch of Turmeric Powder
# 1 tsp of Moong Dal
# 1 tsp Cumin Seeds
# 1 Whole Red Chilly
# 1 Green Chilly
# 1 tsp of Grated Coconuts
# Salt as required
# 1 tsp of Mustard Seeds
# 1 tsp of Urad Dal
# Few Curry Leaves
# Water
# Oil

METHOD

1. In a pressure cooker, add the carrots, green peas, potato, chaoyte / chow chow, beans, moong dal, salt and turmeric powder.
2. Add 2 cups of water and mix well. Pressure cook for 3 whistles.
3. Dry roast the cumin seeds, red chilly, green chilly and the grated coconuts.
4. Cool this down and blend into a smooth paste.
5. Now add this blend paste to the boiled vegetables and mix well. Bring the gravy to a mild boil and switch off the flame.
6. For the tadka, heat 2 tsp of oil and add the mustard seeds. Once it crackles add the urad dal and the curry leaves and saute for a minute. Add this tadka to our kootu.
7. Serve this delicious vegetable kootu with rice or chapatis.
